Coconut Cream Pops

Made this awesome recipe this week - it turned out SO good. Don't skip the cinnamon - adds a great flavor to it.

I did not put the sweetened coconut in mine because I wanted my kids to be able to eat it too, and Mike, and none of them like real coconut.

My popcicle molds are smaller, so I got 24 pops out of this recipe, and so each one was only 44.2 calories!!! It has been a great snack between meals.

Calli: 4-23-12

Breakfast: 2 super thin slices of White American Cheese
                 3 Lays Chips
Lunch: 45 Calorie Bread, Mustard, 2 thin slices of ham, 2 thin slices of White American Cheese, lettuce
            11 Lays Chips
             4 Radiches, 1 tablespoon Reduced-Fat Sour Cream with Ranch seasoning
Snack: 45 Calorie Bread with lite Peanut Butter and homemade Strawberry Jam
Dinner: Hawaiian Haystacks- lite on the cofc, cheese, and chow mein noodles... heavy on the onion, tomatoes, pineapple.
Snack: Air-popped popcorn, I can't believe it's not butter spray... no salt.
Lots of Water today!!

The Time Has Come...Let the Weight-Loss Begin!

I am finally motivated to get this weight off of me! I have cleaned out the fridge, busted out the scale, and posted Lisa's super skinny face photo on my screen-saver! I want to use this site to help us stay accountable for our daily eating, and also to post recipes and weight-loss tricks we can all use! So, to get things started, here is a salad recipe I made last night:
Rip-Off Pita Jungle Salad
Mixed Greens
Crumbled Feta Cheese
Tomatoes
Cucumber
Purple Onion
Pine Nuts
Golden Raisins
Mix Together and Toss in some Lemon Vinegarette
